Coca de Sant Joan Cake

Get creative in the kitchen and try making this tasty cake for your own celebrations:

1) Mix one package of yeast, 1/2 cup of warm water or milk and 4 tbsp of sugar. Let stand for 10 min, then add a pinch of salt, 1/3 cup of flour and let rise for 1 1/2 hours.

2) Beat 3 eggs, pinch of sugar, aniseed, almond extract and orange or lemon rind and add to the yeast mixture. Next, add room temperature butter cubes 2 at a time (1 3/4 stick of butter in all); 2 cups of flour and knead until it feels elastic, not sticky. Cover with a towel in a warm bowl for about 1/2 hours.

3) Once doubled in size, roll out and place on a parchment prepared cookie sheet. Your "coca" should be like a tongue, twice as long as wide.

4) Now the fun part: brush your coca with olive oil and decorate with pine nuts, candied fruit. Bake in a 400 F oven for 10 min or until golden brown.
